1Rinse the black glutinous rice thoroughly under cold running water until the water runs clear. Place the rinsed black glutinous rice in a large bowl and cover with ample cold water. Soak for at least 4 hours, or preferably overnight.
2Drain the soaked black glutinous rice. In a large pot, combine the drained black glutinous rice, 1500 grams of water, and the slice of ginger. Bring to a boil over high heat.
3Once boiling, reduce the heat to low, cover the pot, and simmer for 60 minutes, stirring occasionally to prevent sticking.
