Place the dried zahter mix in a bowl and pour enough warm water over it to just cover. Let it soak for 10-15 minutes to rehydrate, then drain thoroughly and squeeze out any excess water.

Finely dice the tomato and cucumber. Thinly slice the spring onion. Roughly chop the fresh mint and fresh parsley.

In a large mixing bowl, combine the rehydrated dried zahter mix, diced tomato, diced cucumber, sliced spring onion, chopped fresh mint, chopped fresh parsley, chopped walnuts, and pomegranate seeds.
