1Bring a large pot of water to a rolling boil. Add the Fresh egg noodles and cook according to package instructions until al dente. Drain the noodles, rinse thoroughly with cold water to stop cooking and remove excess starch, then toss with a small amount of Vegetable oil to prevent sticking.
2Slice the Scallions into 5 cm segments, separating the white parts from the green parts. Mince the Garlic finely.
3In a small bowl, combine the Light soy sauce, Dark soy sauce, Shaoxing wine, Oyster sauce, and White pepper. Mix well to create the stir-fry sauce.
