1Clean the Fresh mussels thoroughly, scrubbing shells and removing beards.
2In a large pot, add the cleaned Fresh mussels with 100g of Water and cover. Cook over medium-high heat for 3-5 minutes until the Fresh mussels open. Discard any unopened Fresh mussels.
3Remove the Fresh mussels from their shells, reserving about half of them in one shell for presentation. Strain the mussel cooking liquid through a fine-mesh sieve or cheesecloth to remove any grit; set aside.
