1Heat extra-virgin olive oil in a large, heavy-bottomed pan or Dutch oven over medium heat.
2Add the fresh Italian pork sausage, broken into smaller pieces, and cook until well browned on all sides. Remove the browned sausage with a slotted spoon and set aside, leaving the rendered fat in the pan.
3Add the yellow onion to the pan and sauté until softened and translucent, about 5-7 minutes.
