1In a large mixing bowl, combine the wheat flour and salt. Gradually add the water, olive oil, and plain yogurt, kneading until a smooth, elastic dough forms. This should take about 10-15 minutes. Cover the dough with a damp cloth and let it rest at room temperature for at least 30 minutes.
2While the dough rests, prepare the poppy seed paste. In a separate bowl, combine the finely ground poppy seeds with the sunflower oil. Mix well until a thick, spreadable paste is formed. Adjust sunflower oil amount slightly if needed to achieve desired consistency.
3Preheat your oven to 180°C (350°F). Lightly grease a large baking tray.
