1Grate the Zucchini using a box grater or food processor. Place the grated Zucchini in a colander, sprinkle with 3 grams of Salt, and let it sit for 20 minutes to draw out excess moisture.
2After 20 minutes, firmly squeeze the grated Zucchini with your hands or a clean kitchen towel to remove as much liquid as possible. The Zucchini should be quite dry.
3In a large mixing bowl, combine the 00 flour, Baking powder, remaining 2 grams of Salt, and Black pepper. Whisk these dry ingredients together.
