1Wash the aged pumpkin thoroughly. Carefully peel off the tough skin and scoop out the seeds and fibrous parts. Cut the cleaned aged pumpkin flesh into 3-4 cm chunks.
2In a large pot, add the aged pumpkin chunks and 800 grams of water. Bring to a boil over medium-high heat, then reduce heat to medium-low, cover, and simmer for 20-25 minutes, or until the aged pumpkin is very tender.
3While the aged pumpkin is simmering, prepare the glutinous rice flour slurry. In a small bowl, combine the glutinous rice flour with 100 grams of water and mix well until no lumps remain.
