1In a large, heavy-bottomed pot or Dutch oven, heat the Extra-virgin olive oil over medium heat. Add the diced Pork pancetta and cook until crispy, about 5-7 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the pot.
2Add the finely diced Yellow onion, finely diced Carrot, and finely diced Celery stalk to the pot. Sauté gently until softened and translucent, about 8-10 minutes, forming the soffritto.
3Increase the heat to medium-high. Add the Ground beef to the pot and break it up with a spoon. Brown the Ground beef thoroughly on all sides, about 8-10 minutes.
