1In a small bowl, dissolve the fresh yeast in 50g of the water and let it sit for 5 minutes until foamy.
2In a large mixing bowl, combine the "00" flour and 10g of fine sea salt. Make a well in the center.
3Pour the dissolved fresh yeast mixture, the remaining 250g of water, and 20g of extra-virgin olive oil into the well.
