1In a large bowl, dissolve the Fresh yeast in the Water.
2Gradually add the "00" flour to the water and yeast mixture, mixing with your hands until a shaggy dough forms. Add the Sea salt and continue to mix until fully incorporated.
3Turn the dough out onto a lightly floured surface and knead for 10-15 minutes until smooth and elastic. The dough should be soft but not sticky.
