11. Prepare the anchovy broth: In a pot, combine the Water, Dried anchovies, and Dried kelp. Bring to a boil over medium-high heat, then reduce heat and simmer for 15 minutes. Remove the Dried anchovies and Dried kelp from the broth and discard.
22. While the broth simmers, prepare the vegetables: Thinly slice the Zucchini into matchsticks. Julienne the Carrot. Finely chop the Green onion, reserving some for garnish.
33. Cook the Somyeon noodles: In a separate large pot, bring plenty of water to a rolling boil. Add the Somyeon noodles and cook according to package directions, typically 2-3 minutes, until al dente. Drain the Somyeon noodles well and rinse under cold water to remove excess starch and prevent sticking. Set aside.
