1Pat the Tilapia fillets dry with paper towels and cut them into 2-3 cm bite-sized pieces.
2In a medium bowl, combine the Tilapia pieces with the Lime juice, 5 grams of Fine sea salt, 1 gram of Black pepper, 2 grams of Garlic powder, 2 grams of Onion powder, and the Mexican oregano. Toss gently to coat and let marinate for 15 minutes at room temperature.
3In a separate shallow dish, whisk together the All-purpose flour, Cornstarch, remaining 5 grams of Fine sea salt, 1 gram of Black pepper, 3 grams of Garlic powder, and 3 grams of Onion powder.
