1Begin by cleaning the Fresh clams: Place them in a large bowl with cold water and 30 grams of Fine sea salt for at least 30 minutes, allowing them to purge any sand. Drain and rinse thoroughly under cold running water.
2In a large, deep pan or pot, heat the Extra-virgin olive oil over medium heat. Add the Garlic cloves and Red pepper flakes, cooking gently until the Garlic cloves are fragrant and lightly golden, about 2-3 minutes. Do not let them burn.
3Add the cleaned Fresh clams to the pan. Pour in the Dry white wine. Cover the pan immediately and cook for 3-5 minutes, shaking the pan occasionally, until all the Fresh clams have opened. Discard any Fresh clams that do not open.
