In a large bowl, dissolve the Calcium hydroxide in 2000 grams of water. Submerge the pricked Baby eggplants in this solution and let them soak for 6-8 hours, or overnight. This step is crucial for achieving a firm texture.

After soaking, thoroughly rinse the Baby eggplants under cold running water for at least 30 minutes, changing the water multiple times, to remove all traces of Calcium hydroxide. Squeeze them gently to remove excess water.
