1Cut Beef chuck roast into 3-4 cm cubes. Season generously with Salt.
2Heat Lard in a large heavy-bottomed pot or Dutch oven over medium-high heat. Sear Beef chuck roast in batches until browned on all sides. Remove Beef chuck roast and set aside.
3Remove stems from Morita chiles. Toast Morita chiles in a dry pan over medium heat for 1-2 minutes until fragrant, being careful not to burn them. Transfer toasted Morita chiles to a bowl and cover with hot water to rehydrate for 20 minutes.
