Ingredients: 250 g chicken thigh; 240 g Eggs; 100 g enoki mushrooms; 300 g firm tofu; 100 g Kamaboko; 20 g Katsuobushi (dried bonito flakes); 10 g Kombu; 50 g mirin; 300 g Napa cabbage; 150 g negi; 50 g Sake; 100 g shiitake mushrooms; 200 g shrimp; 150 g spinach; 400 g Udon noodles; 50 g Usukuchi soy sauce; 1000 g Water

10 g Kombu
50 g mirin
300 g Napa cabbage
150 g negi
50 g Sake
100 g shiitake mushrooms
200 g shrimp
150 g spinach
400 g Udon noodles
50 g Usukuchi soy sauce
1000 g Water

Hazırlanışı

Gently wipe the Kombu with a damp cloth to remove any impurities; do not wash thoroughly.

Place the Kombu and 1000g Water in a large pot. Heat slowly over medium-low heat.

Just before the Water boils (when small bubbles start to form around the edges), remove the Kombu from the pot.
