1To prepare the pesto traditionally, begin by crushing the Garlic and Pine nuts in a mortar with a pestle until a creamy paste forms.
2Add the Fresh basil leaves and a pinch of Sea salt to the mortar. Continue to crush with a circular motion, pressing the basil against the sides of the mortar, until the basil is a coarse paste.
3Gradually incorporate the grated Parmigiano-Reggiano and Pecorino Sardo, mixing well with the pestle.
