Begin by preparing the ragù: finely dice the carrot, celery stalk, and yellow onion to create a soffritto. Mince the garlic clove. Dice the pancetta into small cubes. Cut the pork shoulder and beef chuck into 2-3 cm pieces.

In a large, heavy-bottomed pot or Dutch oven, heat 30g of extra-virgin olive oil over medium heat. Add the diced pancetta and cook until crispy and its fat has rendered. Remove the crispy pancetta with a slotted spoon and set aside.

Add the diced pork shoulder and beef chuck to the pot and brown thoroughly on all sides. Season with 5g of salt and 2g of black pepper. Remove the browned meats and set aside.
