Cut the Pork spare ribs into 3-4 cm pieces. Blanch the Pork spare ribs in boiling water for 2-3 minutes to remove impurities, then drain and rinse thoroughly under cold water. Pat dry.

In a large bowl, combine the blanched Pork spare ribs with Light soy sauce, Shaoxing wine, Oyster sauce, White pepper, Sugar, minced Garlic, minced Ginger, and rinsed, lightly mashed Fermented black beans. Mix well to coat the Pork spare ribs evenly.

Add the Cornstarch to the Pork spare ribs mixture and mix until the Pork spare ribs are lightly coated. Drizzle with Sesame oil and mix again. Marinate for at least 15 minutes.
