1Prepare the tofu pudding base: In a large heatproof bowl, combine 5 grams of Gypsum powder with 10 grams of Cornstarch and 50 grams of Water, stirring until fully dissolved. Set aside.
2Heat the soy milk: Gently heat the Unsweetened soy milk in a saucepan over medium heat until it reaches about 80-85°C (just simmering, not boiling).
3Set the tofu pudding: Slowly pour the hot Unsweetened soy milk into the bowl with the Gypsum powder mixture, stirring gently once or twice to combine. Do not overmix. Cover the bowl with a lid or plastic wrap and steam over high heat for 15 minutes, or until the tofu pudding is set and firm. Keep warm.
