1To prepare the dough, combine All-purpose flour and 50 grams of Ghee in a large bowl. Rub the Ghee into the All-purpose flour until it resembles breadcrumbs. Add 5 grams of Salt and gradually add Water, kneading to form a firm yet pliable dough. Cover the dough with a damp cloth and let it rest for 30 minutes.
2For the filling, heat 10 grams of Ghee in a pan over medium heat. Add Cumin seeds, Fennel seeds, Coriander seeds, and Asafoetida. Sauté until fragrant, about 30 seconds.
3Add Ginger-garlic paste and Green chilies to the pan and sauté for another minute until the raw smell disappears.
