Heat 28g olive oil in a large heavy-bottomed pot over medium-high heat.

Season the 1000g beef, brown all sides 3–4 minutes per side, then set aside.

Reduce heat to medium, add 5g butter and 500g sliced onion, cook 8–10 minutes until deeply caramelized.
