1Peel the Eggplant partially in stripes, then cut into 1.5 cm cubes. Place the Eggplant cubes in a colander, sprinkle generously with 3 grams of Salt, and let them sit for 20 minutes to draw out bitter liquids.
2While Eggplant is resting, finely chop the Onion. Deseed and finely chop the Green bell pepper. Dice the Tomato into small cubes.
3After 20 minutes, thoroughly rinse the Eggplant cubes under cold water and pat them very dry with paper towels to remove excess moisture and Salt.
