1Remove casing from salsiccia di Norcia. Finely chop the small white onion and mince the garlic. Grate the Parmigiano-Reggiano.
2Heat extra-virgin olive oil in a large skillet over medium heat. Add the salsiccia di Norcia, breaking it up with a spoon. Cook until browned and cooked through, about 8-10 minutes.
3Add the chopped small white onion and minced garlic to the skillet with the sausage. Sauté until the small white onion is softened and translucent, about 5 minutes.
