Cut the Beef chuck, Pork shoulder, and Pork ribs into large, manageable pieces. Season all the meat generously with Salt and Black pepper.

Prepare the soffritto: finely dice the Yellow onion, Carrot, and Celery stalk. Mince the Garlic cloves.

In a large, heavy-bottomed pot or Dutch oven, heat the Extra virgin olive oil over medium-high heat. Sear the seasoned Beef chuck, Pork shoulder, and Pork ribs on all sides until deeply browned. Remove the seared meat from the pot and set aside.
