Thoroughly clean the Octopus by removing the internal organs, beak, and eyes. Rub the Octopus with coarse salt to remove any slime, then rinse under cold running water. Cut the cleaned Octopus into bite-sized pieces.

Prepare the vegetables: Slice the Yellow onion thinly. Cut the Napa cabbage into 3cm wide pieces. Julienne the Carrot. Cut the Green onion into 5cm lengths. Mince the Garlic and Fresh ginger. Slice the Cheongyang chili pepper.

In a mixing bowl, combine the Gochujang, Gochugaru, Soy sauce, Mirin, White sugar, 20g of the minced Garlic, 5g of the minced Fresh ginger, and Black pepper powder to create the spicy sauce. Mix well until all ingredients are thoroughly combined.
