1Finely dice the yellow onion, carrot, and celery stalk. Mince the garlic cloves.
2In a large heavy-bottomed pot or Dutch oven, heat the extra-virgin olive oil over medium heat. Add the diced yellow onion, carrot, and celery stalk. Sauté gently for 8-10 minutes until the vegetables are softened but not browned.
3Add the minced garlic cloves and cook for another 1-2 minutes until fragrant.
