2For the apple compote, peel, core, and dice the Apples into small pieces. In a saucepan, melt 10g of Unsalted butter over medium heat. Add the diced Apples, 20g of Granulated sugar, the zest of half a Lemon, and a squeeze of Lemon juice. Cook, stirring occasionally, until the Apples are soft and slightly caramelized, about 10-15 minutes. Set aside.
