1Thoroughly clean the Fresh scallops, removing any sand or impurities. Pat them dry with a clean cloth.
2In a non-reactive bowl, gently toss the Fresh scallops with the Coarse sea salt. Ensure all Fresh scallops are evenly coated. Cover and refrigerate for 24 hours.
3After 24 hours, rinse the salted Fresh scallops under cold running water to remove excess salt. Drain thoroughly and gently squeeze out any remaining water.
