1Peel the Russet potatoes and dice them into small cubes, approximately 0.5 cm in size. Place the diced Russet potatoes in a bowl of cold water to remove excess starch, then drain thoroughly and pat dry with paper towels.
2In a medium bowl, whisk together the All-purpose flour, Granulated sugar, Baking powder, and Fine sea salt. In a separate bowl, whisk the Large egg and Whole milk until combined. Gradually add the wet ingredients to the dry ingredients, mixing until a smooth, thick batter forms. Cover the batter and let it rest in the refrigerator for 15 minutes.
3Cut the Pork sausages in half if they are long. Take the Mozzarella cheese sticks and, if desired, cut them to be similar in length to the sausage pieces. Thread one piece of Pork sausage onto a wooden skewer, followed by one piece of Mozzarella cheese. Repeat for the remaining sausages and cheese.
