1Remove the rind from the Fontina cheese and cut the Fontina cheese into small, uniform cubes, approximately 1cm in size.
2Place the Fontina cheese cubes in a bowl and pour the Whole milk over them. Cover the bowl and let the Fontina cheese soak in the Whole milk at room temperature for at least 2 hours, or preferably overnight in the refrigerator.
3When ready to cook, set up a double boiler (bain-marie). Place a heatproof bowl over a saucepan of simmering water, ensuring the bottom of the bowl does not touch the water.
