Dragées de Verdun

Combine 1000g of sugar and 350g of water in a heavy-bottomed saucepan over medium heat.

Dissolve the sugar completely and bring the mixture to a boil to create a clear syrup.

Stir in 10g of gum arabic until fully incorporated into the hot sugar syrup.
