1In a large bowl, combine Maida, Yogurt, 150 grams of Water, Baking soda, and Orange food color. Whisk thoroughly to form a smooth, lump-free batter of flowing consistency. Cover and let the jalebi batter rest for 15 minutes.
2For the sugar syrup, combine 400 grams of Granulated sugar and 200 grams of Water in a heavy-bottomed pan. Bring to a boil, then add crushed Green cardamom pods and 0.1 grams of Saffron strands. Simmer until the syrup reaches a one-string consistency (it should feel slightly sticky between your thumb and forefinger). Stir in Lemon juice to prevent crystallization. Keep the sugar syrup warm.
3Heat Ghee in a wide, deep frying pan over medium heat. The Ghee should be hot but not smoking.
