1Put the flour and salt in a bowl and gradually add the water, kneading as you go, to make a soft but pliable dough. This may take 5–7 minutes.
2Transfer the dough to a lightly floured surface and knead using strong downward pressure for about 5 minutes. Cover the dough and set aside for 30 minutes.
3Divide the dough into six equal pieces and shape each piece into a ball. Flatten to a disc and roll out on a lightly floured surface until each piece is 6 inches in diameter.
