1Rinse the dried cannellini beans thoroughly and place them in a large bowl. Cover the dried cannellini beans with plenty of cold water and let them soak overnight, or for at least 8 hours.
2The next day, drain and rinse the soaked cannellini beans. Set aside.
3Finely chop the onion, carrot, and celery to create a soffritto.
