1Rinse 400g glutinous rice thoroughly under cold running water until the water runs clear, then soak it in 400g water for at least 4 hours, or preferably overnight.
2Separately, rehydrate 20g dried shiitake mushrooms and 15g dried shrimp in warm water until softened, about 30 minutes. Drain, reserving the mushroom soaking liquid for later use.
3Dice 150g pork belly into small cubes. Slice 100g Chinese sausage into thin rounds or small cubes. Remove the tough stems from the rehydrated shiitake mushrooms and dice them finely. Dice the rehydrated dried shrimp.
