1Wash Basmati rice thoroughly. In a pot, combine washed Basmati rice, 600 grams Water, and 5 grams Salt. Bring to a boil, then reduce heat, cover, and cook for 15 minutes until Water is absorbed and Basmati rice is tender. Let it rest, then fluff with a fork. Add 15 grams Ghee and gently mix.
2Thinly slice 150 grams Onion, 150 grams Potato, and 150 grams Brinjal. Keep them separate.
3In a large bowl, combine 200 grams Besan, 50 grams Rice flour, 5 grams Red chili powder, 2 grams Turmeric, 1 gram Asafoetida, 5 grams Salt, and 1 gram Baking soda. Gradually add 200 grams Water, whisking constantly to form a smooth, thick batter without lumps. The consistency should be thick enough to coat the vegetables.
