1Prepare the Ragù: Heat 20 grams of extra-virgin olive oil in a heavy-bottomed pot. Add the diced pancetta and cook until crispy. Remove pancetta and set aside, leaving the fat in the pot.
2Add 50 grams of yellow onion, carrot, and celery stalk to the pot and sauté until softened, about 8-10 minutes.
3Add the ground beef to the pot and brown it, breaking it up with a spoon. Drain any excess fat.
