2Combine the washed white rice with 600 grams of filtered water in a rice cooker or heavy-bottomed pot. Cook the white rice until fully done and fluffy.
3Spread the cooked white rice onto a clean tray or plate to cool down to approximately 60 degrees Celsius. It is crucial for the rice to be at this temperature for the koji to activate properly.
