1Clean the Pork leg thoroughly. If not already cut, chop it into large, manageable pieces.
2Bring a large pot of Water to a boil. Add the Pork leg pieces and blanch for 10 minutes to remove impurities. Skim off any foam. Drain the Pork leg and rinse under cold water.
3Slice the Ginger, crush the Garlic cloves, and cut the Scallion into 5 cm lengths.
