Preheat your oven to 180°C (350°F).

Ensure the grey mullets are scaled, gutted, and thoroughly rinsed. Pat them completely dry with paper towels. Make 2-3 diagonal incisions on each side of the grey mullets. Season the grey mullets generously inside and out with sea salt and black pepper.

Finely slice the garlic cloves. Halve the cherry tomatoes. Roughly chop the fresh parsley and fresh oregano.
