1In a large, heavy-bottomed pot, combine the whole milk, piloncillo, and Mexican cinnamon stick.
2Heat the mixture over medium heat, stirring occasionally, until the piloncillo has completely dissolved. Bring it to a gentle simmer.
3Add the baking soda and salt to the simmering mixture. The baking soda will cause the milk to foam up initially; stir continuously to manage this.
