1Rinse the Pork bones thoroughly under cold water. Place them in a large pot, cover with fresh cold water, and bring to a boil. Boil for 5 minutes, then drain and rinse the bones again to remove impurities.
2Return the rinsed Pork bones to the clean pot. Add 2000g of fresh cold water, 30g of Ginger (sliced), and 50g of Scallions (cut into large sections). Add the Star anise. Bring to a boil, then reduce heat to a gentle simmer. Cover and cook for at least 2 hours, skimming any foam that rises to the surface.
3After simmering, strain the broth, discarding the Pork bones, Ginger, Scallions, and Star anise. Season the clear broth with Salt to taste. Keep the broth hot.
