1To prepare the dough, combine the 00 flour, Semolina flour, and Fine sea salt in a large bowl. Add 30 grams of Extra-virgin olive oil and the Water gradually, mixing until a shaggy dough forms.
2Turn the dough out onto a lightly floured surface and knead for 10-12 minutes until it is smooth and elastic. Form into a ball, cover with plastic wrap, and let it rest at room temperature for at least 30 minutes.
3For the filling, finely dice the Red onion. Dice the Lamb shoulder into very small, uniform pieces.
