Pastel de Tres Leches (Three Milk Cake)

Preheat oven to 180°C. Grease and line a 9-inch round cake pan with parchment paper.

Whisk 360g eggs with 170g sugar until pale and fluffy, about 5 minutes. Fold in 106g flour and 15g baking powder gently.

Stir 10g vanilla extract into batter. Pour into prepared pan and bake 25–30 minutes until a toothpick emerges clean.
