1Carefully slit open each sac of Mentaiko lengthwise and scrape out the roe into a medium mixing bowl.
2Add Japanese mayonnaise, Soy sauce, and Mirin to the bowl with the Mentaiko. Mix thoroughly until a smooth sauce is formed.
3Bring a large pot of water to a rolling boil. Add the Udon noodles and cook according to package instructions until al dente. For fresh Udon, this usually takes 1-2 minutes; for frozen Udon, 2-3 minutes.
