1Rinse the Glutinous Rice thoroughly, then soak in cold water for at least 8 hours or overnight. Drain well before use.
2Rinse the Mung Beans, then soak in cold water for at least 4 hours. Drain well before use.
3Soak the Dried Shiitake Mushrooms and Dried Chestnuts in separate bowls of warm water for at least 2 hours until softened. Drain, then remove stems from Dried Shiitake Mushrooms and slice them. Ensure Dried Chestnuts are peeled.
