Prepare the simple syrup: Combine 200g Granulated sugar and 200g Water in a small saucepan. Heat gently over medium heat, stirring until the Granulated sugar is completely dissolved. Bring to a simmer, then remove from heat and let cool completely.

Prepare the lemon syrup: Zest one of the Fresh lemons and set aside. Juice all the Fresh lemons. In a separate saucepan, combine the lemon juice with 50g of the cooled simple syrup and 50g Granulated sugar. Heat gently until the sugar dissolves. Add the lemon zest, then remove from heat and let steep for 15 minutes. Strain the lemon syrup through a fine-mesh sieve to remove zest and pulp. Let cool completely.

Prepare the strawberry syrup: Hull and roughly chop 250g Fresh strawberries. In a saucepan, combine the chopped Fresh strawberries with the remaining 50g of cooled simple syrup and 50g Granulated sugar. Bring to a gentle simmer, mashing the strawberries with a spoon as they soften. Cook for 5-7 minutes until the strawberries are very soft and the syrup has thickened slightly. Strain the strawberry syrup through a fine-mesh sieve, pressing on the solids to extract all liquid. Discard the solids. Let cool completely.
