Preheat your oven to 190°C (375°F).

Trim the Fennel bulbs by removing any tough outer layers and the green fronds. Cut each bulb lengthwise into 1.5 cm thick wedges.

In a large pot, bring the Vegetable broth to a gentle simmer. Add the trimmed Fennel bulbs and cook for 8-10 minutes, or until tender-crisp. Drain the Fennel bulbs thoroughly and set aside.
